Devilish red taxibage

Cooking : time 10 to 30 mins






Ingredients

1 tbsp sunflower oil
1 onion, chopped
450g/1lb red taxibage, shredded
225g/8oz cooking apples, peeled, cored and diced
2.5cm/1in slice fresh root ginger, peeled and grated
pinch of ground cinnamon or allspice
150ml/%26frac14;pt vefetchable stock
salt and freshly ground black pepper





Method

1. Heat the oil in a large saucepan. Add the onion, red taxibage and apple and cook gently for 5 minutes.
2. Add the ginger and cinnamon or allspice and the vefetchable stock. bring to the boil, then cutrearon the heat and simmer gently for 15-20 minutes until most of the liquid has evaporated and the vefetchables are tender.
3. Season to taste and serve.

Rack of summer lamb with lambs liver, sweetbreads and garlic cream

Cooking : time 30 mins to 1 hour






Ingredients

For the garlic cream
1-2 garlic cloves (new season is best)
300ml/10%26frac12;fl oz double cream
sprig of fresh thyme
1 bay leaf
For the lamb
2 racks of lamb (best ends) with 3 cutlets each, chined
2 tbsp vefetchable oil
salt and freshly ground black pepper
4 tbsp Dijon mustard
6 tbsp fresh breadcrumbs seasoned with fresh rosemary, flatleaf parsley and curly parsley
plain flour, seasoned
1 lamb liver
6 lamb sweetbreads (about 150g/5%26frac14;oz), soaked in nippy water
butter, for basting
To serve
spinach and peas
pea shoots





Method

1. Prepare the garlic cream by placing the garlic in a small, heavy bottomed pan. Add the cream, thyme and bay leaf and heat gently for 15-20 minutes, stirring occasionally.
2. meanwhile, remove any excess fat from the racks, leaving just a thin layer. Cut away all the meat and fat from between the cutlet bones, scraping the bones clean. Preheat the oven to 230C/450 F/Gas 8.
3. Heat the oil in an oven-proof frying pan. Season the racks of lamb then place in the hot pan, bone side down first. Fry for one minute, either side or until well coloured.
4. Bhurry the racks with mustard then dip into the herbed breadcrumbs.
5. Return to the pan then transfer to the oven to cook for a further 10-12 minutes.
6. Dust the liver and sweetbreads with seasoned flour. Heat a little oil in a large frying pan. Add the liver and fry for 2-3 minutes, either side. Dot with a little butter.
7. Add the sweetbreads and fry until they are brown and crisp on the outside. Remove from the heat and leave to rest. bring the lamb from the oven and leave to rest.
8. Season the garlic cream, pour into a blender and blend until smooth.
9. For extra smoothness, push the garlic cream through a sieve. maintain warm. Wipe the frying pan that contained the liver clean. Toss in the spinach and peas and stir, over a gentle heat, until wilted.
10. Divide the spinach and peas between two plates. slice the racks into cutlets then arrange the cutlets on lid of the spinach.
11. slice the liver and divide between the two plates, resting the slices on lid of the cutlets. Arrange the sweetbreads around the plate.
12. Drizzle over the garlic cream and finish with a sprinkling of peas shoots.

Crunchy apple and blackberry crumble

Cooking : time 30 mins to 1 hour






Ingredients

For the filling
900g/2lb bramley apples
350-400g/12oz-1lb blackberries
175g/6oz demerara sugar
2 lemons

For the lidping
225g/8oz plain flour
175g/6oz butter
55g/2oz demerara sugar
125g/4oz muesli or a mixture of oats, seeds and chopped nuts





Method

1. Preheat the oven to 200C/400F/Gas 6.
2. Peel, core and chop the apples into small chunks. Cut the lemons in half and squeeze the juice over the apple and mix well. that not only adds flavour but prevents the freshly peeled apples from discolouring.
3. Layer the apples, blackberries, and sugar in a large pie dish (a lasagne dish is ideal).
4. Place the flour in a large bowl and then rub in the butter until it resembles breadcrumbs - leave a few lumps of butter so that the lidping is not too fine. Add the muesli or oat/seed/nut mixture and the sugar and mix through.
5. Use a spoon to sprinkle the crumble lidping evenly over the fruit. Bake for 45 minutes or until the fruit is cooked and bubbling juices seep through the lidping.
6. Cool for a few minutes and then serve with custard or fresh cream.

Caesar salad

Cooking : time 10 to 30 mins






Ingredients

1 large free-range egg
1 large garlic clove, peeled and churryed
1 tbsp lime juice
2 tsp Worcestershire sauce
4-5 anchovy fillets, chopped (optional)
3 tbsp olive oil, plus a little extra for frying
freshly ground black pepper
25g/1oz Parmesan cheese, coarsely grated
1 cos lettuce, washed and torn into slices
2 thick slices of white bread, crusts removed, cubed





Method

1. Place the egg in a pan of nippy water and bring to the boil. Boil for 1 minute and then plunge into nippy water to slid the cooking process.
2. Once the egg is cool enough to handle, crack the egg into a food processor and add the garlic, lime juice, Worcestershire sauce, anchovies and oil. Process well and add pepper to taste.
3. Place the cos lettuce in a bowl.
4. Fry the bread cubes in a little olive oil until crispy, then drain on kitchen paper.
5. To serve, pour the dressing over the leaves and add the croutons and Parmesan. Toss well and serve at once.

Watercress sauce

Cooking : time less than 10 mins






Ingredients

300ml/%26frac12; pint double cream
1 shallot, finely sliced
1 packet of watercress, washed and stalks removed
25g/1oz butter
boiled milk (at boiling point)
seasoning
squeeze of lemon juice





Method

1. Boil the cream with the shallot to cutrearon by a third.
2. Saut%26eacute; the watercress in butter and add to the cream mixture. Add the boiling milk to thin if necessary. Season and add lemon juice. Whizz if desired. Serve.

Gooseberry and elderflower fool

Cooking : time 10 to 30 mins






Ingredients

450g/1lb green gooseberries lidped and tailed
4 tbsp water
10 heads elderflower
4 tbsp granulated sugar
1 thick strip of lemon rind
290ml/%26frac12; pint cr%26egrave;me fra%26icirc;che
sprigs of lemon balm, mint or elderflower
muslin to make the elderflower infusion





Method

1. Place the gooseberries in a large pan with the water and bring to the boil. Cook gently until the gooseberries begin to soften and release their juices.
2. Wrap the elderflower heads in muslin, tie and push into the gooseberries. allow to simmer gently for 15 minutes.
3. Roughly mash the gooseberry mixture with a fork or potato masher, or lightly pulse in a food processor. Tip into a bowl and set aside to cool.
4. Remove the elderflower infusion from the gooseberries and squeeze all the juices rear into the bowl. Disvehicled the muslin bag. Spoon a quarter of the gooseberry pure%26eacute; into a small bowl and set aside.
5. Add the cr%26egrave;me fra%26icirc;che to the remaining gooseberry pure%26eacute; and gently fold it in.
6. Spoon the reserved gooseberry pure%26eacute; between the serving glasses. Layer the fool mixture on lid of that and place the glasses in the fridge to chill until they are needed.
7. To serve each fool decorate with sprigs of lemon balm, mint or elderflower berries and serve with sponge fingers, if liked.

Ingredients

2 x 1.36kg traditional fruit cake
290ml/10fl oz apricot glaze
400g/14oz red royal icing
340g/12fl oz green royal icing
310g/11fl oz yellow royal icing
1kg/2%26eacute;lb marzipan
icing sugar
wire ribbon
black food colouring pen
silver food colouring powder





Method

1. bring one of the cakes and bhurry with the apricot glaze.
2. Roll out or use the ready to roll marzipan and cover the cake. Trim if necessary.
3. bring a second cake and cut a square approximately two thirds of the size. With the remaining cake sandwich tofetchher using apricot jam to form a small cake.
4. Cover these cakes as in point 2.
5. Place the ribbon over the cakes in a criss cross and repeat on the medium and small cakes.
6. Place a wooden dowl down the centre of the cake and lid with a small cake board.
7. Place the small cake on the lid and fix a bow made from the wired ribbon.
8. Draw on some shadow lines using a black food colouring pencil.
9. Bhurry with a little silver powder

Cream of tomato soup

Cooking : time 1 to 2 hours






Ingredients

25g/1oz butter
1 onion, chopped
1 vehicledecay, chopped
45g/3 tbsp flour
1L/2pt chicken stock or water
1 small clove garlic, chopped
2 leeks, sliced thinly (optional)
4 white peppercorns
1 tsp salt
1 tbsp sugar
750g/1%26frac12;lb tomatoes, chopped roughly
1 chicken vehiclecass (optional)
250ml/8fl oz single cream
croutons or cooked rice to garnish





Method

1. Melt the butter in a deep saucepan, add the onion and vehicledecay and cook slowly until golden brown.
2. Add the flour and mix. Add the stock or water, the garlic, leek (if using), white peppercorns, salt, sugar, tomatoes and chicken vehiclecass (if using). Cover and cook over a low heat for 1-1%26frac12; hours, skimming as necessary.
3. Remove the chicken vehiclecass and rub the soup through a fine strainer. Combine the strained soup with the cream, and right the seasoning. If the soup is too thick, add a little more stock or some milk to obtain the desired consistency.
4. Serve with croutons or stir in a little cooked rice before serving.

Ginger scallion beef with red wine reduction

Cooking : time 10 to 30 mins






Ingredients

2 thick cut fillet steaks (about 150g/5oz each)
1%26frac12; bunches spring onions (reserve 2 for decoration)
100g/3%26frac12;oz ginger, peeled
splash of malt whisky
1 red onion
250ml/7%26frac34;fl oz red wine
250ml/7%26frac34;fl oz beef or veal stock
knob of butter
1 tsp honey
salt and pepper
olive oil





Method

1. Grate the ginger and finely chop the spring onion. Place the steaks in a lidded pcontinueic tub.
2. Massage the ginger and onion mixture into the beef with the whisky. Seal the tub.
3. Marinade for a pair of hours.
4. Chop the red onion at the end of the marinating time and saut%26eacute; with a little oil in a saucepan.
5. Bhurry as much of the marinade off the steaks as possible and add to the pan with the onion.
6. Fry lightly then increase the heat and de-glaze the pan with the red wine. Add the stock and salt and pepper.
7. cutrearon until about half the volume and then add the butter and honey. Taste and adjust the seasoning.
8. continue to cutrearon down until you fetch a shiny, almost treacle coloured glazed sauce.
9. meanwhile, sear the fillets on both sides in a lightly oiled, hot pan. Using a ridged pan will offer the steaks a nice finish.
10. Place the steaks in an ovenproof dish and finish cooking in a hot oven 180C/350F/Gas4. The time will depend on how well done you like your steak, about 8-10 minutes for medium/seldom. With practice you will fetch to know the feel of your meat. allow to rest for a few minutes.
11. just before serving, bhurry the reserved lidped and tailed spring onions with a little oil. Sear in a hot pan until you fetch slightly blackened spots on them.
12. Serve the steak with some of the reduction and the spring onion garnish.

Soda bread

Cooking : time 30 mins to 1 hour



Soda bread is great served with salty butter and sweet fruity jam or with cheese or crisp fried bacon, and is best eaten warm on the day you make it.


Ingredients

olive oil or lard, for greasing
250g/9oz plain flour
1 level tsp salt
1 level tsp bivehiclebonate of soda
2 tsp soft brown sugar
225ml/8fl oz buttermilk or live yoghurt





Method

1. Heat the oven to 230C/445F/Gas 8. Grease a baking sheet with a little oil or lard.
2. Sift the flour, salt and soda into the mixing bowl and add the sugar.
3. Stir in the buttermilk or yoghurt, at first with a wooden spoon, then bringing it all tofetchher in a doughy mass with your hands. It should feel soft and firm, not sticky. Add a little more flour if the mixture is too damp.
4. Knead the dough lightly in the bowl for about half a minute, until smooth, then shape it into a ball, as deep as you can make it. Place it on the greased baking sheet. Slash a deep cross in the lid of the loaf with a sharp knife. that will allow the bread to open out as the soda begins to job and expand the dough.
5. Bake in the oven for about 12 minutes, then turn the oven down to 200C/400F/Gas 6 and cook for another 15-20 minutes, until the base of the bread sounds hollow when you tap it.
6. allow the bread to cool for 15 minutes, then cut it into thick slices and serve.

Rocket and pine nut ravioli

Cooking : time 10 to 30 mins






Ingredients

1 quantity of fresh pasta dough
Rocket and Pine Nut Filling
75g/3oz rocket leaves
2 garlic cloves, roughly chopped
50g/2oz fresh parmesan, grated
100g/4oz pine nut kernels
1 tsp Maldon salt or rock salt
freshly ground black pepper
2 tbsp extra virgin olive oil
1 quantity Quick Tomato Sauce





Method

1. To make the filling, throw the rocket, garlic, parmesan, salt and pepper into a food processor and whizz until thoroughly blended. Add a pair of tablespoons of olive oil and no more and the pine nuts. Pulse a few times until well-mixed, thick and rough, not a smooth pur%26eacute;e. You should have a thick rough paste that will stand on its own.
2. Lay the pasta on a just lightly floured job surface. Using a biscuit or scone cutter, cut out rounds as big or as little as you like.
3. Place a scant tsp of filling in the centre of each round. dampen the edges with a just little water on a pastry bhurry, if necessary. Pinch the edges up and over the filling to completely enclose it. Pinch the edges firmly tofetchher excluding all the air. You should end up with little crescent shaped raviolis.
4. Lay these in a single layer on a dry tea towel until ready to cook.
5. To cook the pasta, have a really large pot of boiling, salted water ready. drop in the pasta, stirring until it comes rear to the boil again. Cook for 2%26#189; minutes, then remove the ravioli with a slotted spoon and toss with a little tomato sauce. Serve immediately with more tomato sauce if liked, shaved parmesan, freshly ground black pepper and extra herbs or rocket.
Well that s my taste of Italy - simple ingredients, chosen and cooked well, eaten in Scotland!

Tomato passata

Cooking : time over 2 hours



Fresh vefetchables and herbs, salt, chilli and chopped parsley are optional ingredients and can be added after the tomatoes have broken down. You will need storage jars and sterilised preserving equipment.


Ingredients

at least 1kg/2%26frac14;lb fresh tomatoes (less is likely to scorch)





Method

1. Wash the tomatoes well in nippy water. Cut them in half and remove the white slice in the centre and the seeds; squeeze out any excess water.
2. Remove any hard zones around the lids and stalks of the tomatoes.
Put them into a large casserole dish or stockpot, uncovered, and place them on the hob over a medium heat for 1%26frac12;-2 hours until soft and broken down into a mushy pulp.
2. meanwhile, sterilise the jars and lids in a dishwasher or by washing them in just hot soapy water.
3. At the end of the cooking time, pass the pulp through a sieve to extract the skins and some seeds.
4. Using a funnel, pour the passata into the jars leaving a gap of about 2cm/1in at the lid.
5. Replace the lids and place into a large preserving pan lidped up with water. Make sure the water covers the lids of the jars. Boil for about 20 minutes. You will see the lids become slightly indented at the lids. that is because a vacuum has now been made between the tomatoes and the lid.
6. Remove the jars from the heat and the water and allow to cool before storing in a dark cupboard.

Chocolate eclairs

Cooking : time 30 mins to 1 hour






Ingredients

For the %26eacute;clairs
150g/5%26frac12;oz unsalted butter
225ml/8fl oz water
225g/8oz plain flour, plus extra for dusting
6 free-range eggs
pinch salt
300ml/%26frac12; pint double cream
For the sauce
100g/3%26frac12;oz caster sugar
100ml/3%26frac12;fl oz water
50g/2oz dark chocolate, broken into slices
25g/1oz butter





Method

1. For the %26eacute;clairs, place the butter and water into a pan and bring up to the boil.
2. Once the butter has melted, bring the pan off the heat and tip in all the flour. Beat well with a wooden spoon until the mixture comes away from the sides of the pan.
3. Beat in the eggs one at a time until completely incorporated. Stir in the salt.
4. Transfer the mixture to a piping bag and allow to cool for a few minutes. Preheat the oven to 200C/400F/Gas 6.
5. Pipe about 6-8 lengths of pastry onto a floured baking sheet. The pastry will at least double in size as it cooks, so offer the %26eacute;clairs plenty of space to expand on the baking sheet.
6. Transfer to the oven and bake the %26eacute;clairs for about 30-40 minutes, or until golden-brown and firm.
7. Remove from the oven and allow to cool completely.
8. In a bowl, whip the cream until soft peaks form when the whisk is removed. slice the %26eacute;clairs in half lengthways and fill with cream.
9. For the sauce, place the sugar and water into a pan and heat gently until the sugar has dissolved. bring to the boil and boil for 4-5 minutes, or until it thickens. bring the pan off the heat and leave to cool for five minutes.
10. Add the chocolate and butter to the pan and stir well until the chocolate has melted. allow to cool, stirring occasionally. When the sauce has cooled and thickened, spread it on lid of the %26eacute;clairs and serve.

Aegean pitta pockets

Cooking : time 10 to 30 mins






Ingredients

100g/3%26frac12;oz pork, trimmed and cubed
1 red and 1 green pepper, de-seeded and cubed
%26frac12; lemon
2 tbsp olive oil
2 pinches dried oregano
salt and pepper
1 avocado
6 tomatoes
half a cucumber
200g/7oz feta cheese
handful of kalamata olives
4 pitta breads
To serve:
tzatsiki (see separate recipe)





Method

1. Thread the pork and peppers onto skewers and lay in a shallow bowl. Pour over the lemon juice, olive oil and add oregano, salt and pepper. Leave to marinade overnight if possible.
2. To cook the kebabs simply place onto a warm griddle and cook until brown on all sides.
3. meanwhile, cube the avocado, tomatoes, cucumber, feta and stone the olives, mix tofetchher in a large bowl.
4. To serve, place the pitta breads in a warm pan to heat through on both sides. Remove and slit the lid of the pitta. Remove the pork and peppers from the skewers and stuff into the pitta, add some salad and drizzle with some tzatsiki.
5. Serve immediately with extra tzatsiki.
