vehiclepaccio of monkfish with lemon olive oil

Ingredients

225g/8oz monkfish fillet
50ml/2fl oz lemon olive oil
salt and freshly ground white pepper
50g/2oz rocket leaves
15g/%26frac12;oz parmesan





Method

1. The best vehiclepaccios are made from just thin slices of meat or, in that case, fish. To slice the monkfish just thinly you will need to part-freeze it. Freeze the fillet for about 1 hour, then thinly slice with your sharpest, thinnest knife. Lay the slices neatly onto four nippy plates. Pour over the lemon olive oil and dust lightly with salt and a little freshly ground white pepper.
2. Lay the rocket leaves on lid. Make shavings of the parmesan from a block of cheese by using a potato peeler. Lay about 6-8 shavings of parmesan over the rocket. Serve at once.
