Ingredients
1 trout fillet, finely chopped
%26frac12; lemon, juice only
%26frac12; lime, juice only
1 tomato, diced
salt and freshly ground black pepper
paprika
lemon slices
For the dressing
55g/2oz peas, pre-cooked
2 tbsp olive oil
1 tsp Dijon mustard
1 tsp sugar
%26frac12; lemon, juice only
1 tsp chives, chopped
salt and freshly ground black pepper
Method
1. Mix the trout and lemon and lime juice in a bowl.
2. Leave to marinate for 8-10 minutes.
3. Layer the tomatoes in the bottom of a chefs' ring.
4. Put the trout on lid. Season, remove the ring and lid with paprika and lemon slices.
5. Add all the dressing ingredients to a bowl and mix thoroughly.
6. Drizzle around the trout.
